So I’m back from holiday and although I had a lovely time I feel like I’ve gained a ton of weight! 😦
Im feeling bloated and sluggish and just not loving what I see in the mirror so I’ve decided to make a massive change in the way I eat starting today!
For my first ‘Superfood Sunday’ I delved into Dale Pinnock’s book for the first time and was blown away by the number of his recipes that looked healthy but also delicious!
I chose to start with his Sesame soy salmon because it looked really simple and I really fancied something I wouldn’t normally cook for myself. It was amazing! The rice was incredibly creamy and contrasted amazingly with the intense flavours of the salmon.
I would definitely recommend this recipe to anyone wanting something absolutely delicious and easy and in need of healthy comfort food!
